Job Summary:

A Culinary Intern will work in various kitchens, coached by many talented chefs including the Executive Chef and Sous Chef. In this internship, you will be challenged to execute at a professional production level while learning many aspects of culinary operations in the hospitality business. This opportunity will provide a learning experience in Casino and Live Racing Operations, Special Events, Buffet Operations and will also have the opportunity to show creativity in creating menu specials for main kitchens and other events. Responsible for supporting the Companies mission, vision, and values by providing fun and games like no place else, and adheres to the Canterbury Way by focusing on our core values.

Essential Duties and Responsibilities:

  • Lead by example.
  • Responsible for maintaining a high degree of hospitality, as well as a positive and professional demeanor at all times.
  • Creates high levels of morale, fosters teamwork, inspires collaboration, and provides suggestions for growth to management.
  • Creating menu specials for main kitchens and various Special Events including the Taste of Canterbury.
  • Cooking in front of the public for Banquets and Special Events, which uniforms and stations should be clean and presentable.
  • Responsible for assisting in banquet, bulk, and ala carte menu production including both hot and cold preparations.
  • Reading orders, understand instructions and communicate with co-workers to make sure food is delivered at a high quality.
  • Monitor and maintain inventory levels of ingredients and supplies as needed to prevent shortages.
  • Learn and monitor food for rotation, freshness and safety.
  • Working with ovens, grills, fryers and other industrial equipment.
  • Maintain proper sanitation and kitchen cleanliness including but not limited to the cleaning of equipment as well as general tasks such as wiping tables, sweeping and mopping floors.
  • Perform other duties as assigned.

Required Qualifications:

  • Must be at least 16 years of age.
  • Must be pursuing high school diploma.
  • Good verbal communication skills.
  • Self- motivated and dependable.
  • Able to multitask with good attention to detail.

  • This position requires frequent standing and walking.
  • Able to lift 30-50 pounds.
  • Proficient and accurate handling a knife and working in close quarters with others near industrial equipment.
